Ingredients:
Serves 3 - 4 pax

For prawns
--------
230g of prawns / shrimp - deshelled & deveined
1/2 teaspoon of salt
1 tablespoon of cornflour

For lotus root
--------
200g of lotus root
1/2 teaspoon of salt
1 tablespoon of cornflour

For sauce
--------
250ml of water
2 tablespoons of oyster sauce
2 tablespoons of light soy sauce
1 tablespoon of dark soy sauce
1 tablespoon of sugar

Other ingredients
--------
5g of thinly sliced young ginger
1/2 of a large red onion
5 cloves of thinly sliced garlic
2 stalks of spring onion - add the stem first and the rest later
10 pieces of dried red chilli (rehydrated & deseeded)
1 teaspoon of Szechuan peppercorn
Some cornstarch solution
2 tablespoons of black vinegar
1 tablespoon of sesame oil
1 tablespoon of Chinese cooking wine (Shaoxing Huatiao wine)
A handful of cashew nuts or peanuts
